I find that when you ground seeds with nuts their oils are released giving a unique nutty fullness.

Ingredients

2 cups cooked quinoa, (3/4 cup raw quinoa boiled with a vegetable cube, some salt & 2 cups water.)

Juice of 1 lemon & 1 lime

Sunflower, pumpkin, flaxseed, poppy seeds & some peanuts grounded all together

3 tbs olive oil

salt&pepper

cucumber

tomatoes

1/2 avocado

1 spring onion

a handful of parsley & dill

some basil leaves

Directions

Always remember to leave the quinoa rest covered after boiling. It adds a fluffy texture to it!

Mix all ingredients into a bowl. Sprinkle the quinoa, & mix to combine. Add the lemon juice and olive oil at the end. Incredibly yum!

Now it doesn’t have to red quinoa you know. Just Quinoa. 😉 Here I have also added some lettuce and peppers!
