A forgotten recipe from the greek island of Kassos! These unique beans are full of flavonoids and healthy fibers but they put you to work! It’s all worth it, trust me. 😉

Ingredients

500gr broad beans soaked overnight

2 large tomatoes

2 yellow bell peppers

2 large onions

2/3 cup olive oil

1 cup water to cover the beans

1 tbsp dry sage

1 tbsp oregano

Himalayan salt & black pepper

Directions

Boil the beans for 30 min and then skin them. Place in a ceramic pan and add the tomatoes blended, the peppers, the onions in rings, and the seasoning. Cover with foil and put in a preheated oven for 1 hour at 180 C. Uncover and let for another 30 min. Then switch the oven off and let sit for another 30 min. Done!
