Best things come when you least expect it.

This is the case for these raw bars that were supposed to be cookies until I decided they taste too good to cook!

They passed the colleague taste test with honours and I am telling you, they are hard to please! Especially given the fact that they are not into healthy eating whatsoever..! I mean everybody was going like: what is buckwheat again? Yep. That’s my day life. 😁

Healthy is an understatement when it comes to these babies that are my first raw bar recipe and certainly not the last one since I really loved them!

Vanilla & banana are the main aftertastes that characterises this awesome result.

For all you mamas out there! These raw bars are soft and so healthy, they make excellent baby food!

Ingredients:

1 cup buckwheat

1/4 cup zea bran

1/2 cup rice flour

3 tbsp honey

1 tsp vanilla

1 banana

5 tsp milled flaxseeds in 130 grams water

1/3 cup cranberries dried

1/3 cup sunflower & pumpkin seeds

Directions:

In a bowl stir flours. In a small bowl mix flaxseeds & water and let stand for 10 minutes until it becomes like jelly. Then add honey and the banana mashed. Stir and pour over the flours. Make the dough and then add the seeds & cranberries. Stir them into the dough. Then place into a deep baking tray. Even the surface with your fingers to make a 2 cm height dough. Sprinkle lots of cinnamon and some cardamom powder and put in the refrigerator for 1 hour.

 Done! It’s so soft, full of flavour and for real, no one can eat just one!
