Traditional Greek Chickpea Stew!
This is an oscar winning performance for this phenomenal legume that was gifted to us from nature in abundance. So grateful for it. I mean, look at it. A beauty for the eyes. And the taste…unique! Chickpeas become complete in the oven. Can’t get any better than this! Trust me.
⚜️Ingredients:
500gr chickpeas
2 cans tomato sauce in pieces
1 & half cans water
3 medium carrots
olive oil
2 garlic gloves
pink salt, pepper
1 large onion in pieces
1 large onion in slices
Oregano
⚜️Directions:
Put chickpeas in water overnight. Heat 1/3 cup olive oil in a large pot. Stir in the garlic & onion in pieces. Add tomato sauce, water, and season. Add chickpeas & carrots. Bring to boil and let cook in low heat for 40 minutes. Transfer in a baking pan, add 1/4 cup olive oil on top and place red onions on top in slices. Cover and let bake for 20 minutes. Remove foil and let under the grill (broil) for 5 minutes or until onions become brown.
