Spicy Coconut curry tortelloni with roasted veggies.
Ready boiled corn cut long side and then in pieces
2 tbsp olive oil
1/2 tsp curry powder
1/4 tsp cumin
1 cup coconut cream
1/2 vegetable cube(optional)
Around 15 drops Tabasco or as much as you can handle!

Put eggplant sliced in salt water for 30 minutes. Then cut in pieces, sprinkle some olive oil and roast at your ovens grill for like 10 minutes or until golden brown. Put carrots cut in strips on the same tray. Put olive oil in a wok. Stir veggies for 2 minutes, season, add coconut cream, vegetable cube and stir. Add your desired pasta and mix. Add tabasco at the end. Decorate with cherry tomatoes and fresh basil. Serve with lime for a citrus boost! 🍋
